Blueberry cheesecake

Blueberry cheesecake: fresh and delicious, will surprise you guests!

This recipe will be a hit!

INGREDIENTS:
200g biscuits
80g (1/3 cup) melted butter
300g Blueberries, fresh or frozen
25g (2 tbsp) Sugar
450g (2 cups) Cream cheese
160ml (2/3 cup) Heavy cream
1 tsp vanilla extract

1 tbsp lemon juice

125g (1 cup) Powdered sugar
10g Gelatin powder
50ml water
150 blueberries, fresh on top

MERHOD:
Mix melted butter with crushed biscuits and transfer it to a springform pan, refrigerate it for an hour. In a small saucepan heat blueberries with lemon juice and sugar, then blend it until smooth.
In  a large bowl beat cream cheese with powdered sugar, heavy cream, vanilla extract and cooled blueberry mixture. Add in gelatin and mix everything well. Transfer the mixture to a springform pan. Refrigerate it overnight or for a few hours. Decorate with blueberries and flowers.
