Coconut Muffins

Coconut Muffins: the recipe for some delicious and light coconut sweets

Ingredients

  • COCONUT, GRATED OR DESICCATED  60 g
  • ALL-PURPOSE FLOURv 100 g
  • COCONUT YOGURT  160 g
  • GRANULATED SUGAR  70 g
  • VEGETABLE OIL  60 g
  • BAKING POWDER FOR SWEET 12 g
  • EGG  1

FOR DECORATING

  • HONEY  1 tbsp
  • COCONUT, GRATED
  • WATER  2 tbsp


How to make coconut muffins

Step 1

Mix the egg and granulated sugar with a hand whisk.

Step 2

Work everything until the mixture is semi-whipped.

Step 3

Add the coconut yogurt.

Step 4

Pour in the seeds oil (or the extra virgin coconut oil).

Step 5

Incorporate the ingredients well.

Step 6

Now add the baking powder for sweets.

Step7

Add the all purpose flour.

Step 8

And then add also the grated coconut.

Step 9

Mix everything with a whisk.

Step 10

At the end you will have to obtain a homogeneous and rather compact mixture.

Transfer the dough into paper cups, placed in a muffin pan, and bake at 190° C (374°  F) for 15 minutes.

Step 12

Once baked, take the coconut muffins out of the oven and let them cool.

Step13

Prepare a syrup of honey and water and brush it on the surface of the coconut muffins.

Step 14

Sprinkle the coconut muffins with grated coconut.

Step 15

Transfer the coconut muffins to a serving dish and enjoy.
